The Exchange kitchen will see guest chef, Tom Kitchin, demonstrate why he is one of the most influential chefs in the UK. He runs the aptly named Michelin-starred restaurant, The Kitchin, on Edinburgh’s stylish Leith waterfront. Tom has trained under Pierre Koffmann in the 3-star Michelin La Tante Claire restaurant in London, Guy Savoy at his 3-star Michelin restaurant in Paris and in Alain Ducasse’s world-famous restaurant, LeLouis XV, in Monte Carlo.He is a frequent guest on Saturday Kitchen, was a 2009 finalist on Great British Menu and joined the 2010 judging panel on Masterchef.All delegates at this event will receive a copy of his book, “From Nature to Plate: Seasonal Recipes from The Kitchin”.

This new session will feature live cookery demonstrations from Great British Menu chefs alongside sharp restaurant analysis from The Guardian food critic, Matthew Fort.The session will be hosted by Ronan Kelly,broadcast journalist and fully fledged foodie. Local chefs Niall McKenna and Brian McCann will create dishes featuring some of the best local ingredients – these will go to the chef table for comment and the audience will have the opportunity to vote on which dish they like best. Matthew Fort, judge on Great British Menu for the last four years and food writer for 25years, will comment on where the industry is heading and give some witty insights on his experience of food at home and abroad.
