Carol’s Stock Market

Carol’s previous career was as a Stock Trader working in the financial markets, a stressful job for which you need to be healthy and in peak condition. Her success, she believes was due, in no small measure, to her passion for making natural stocks, broths and bone broths which are high in natural nutrients.

Carol’s passion for promoting a healthy lifestyle provided the motivation to launch Carol’s Stock Market, sharing her knowledge of the benefits to health and happiness of creating tasty food using a range of delicious, hand-made, all-natural stocks, broths, bone broths and gravies.

Authenticity is key to her approach. Carol takes quality, locally sourced ingredients such as all-natural beef, free-range chicken, free-range turkey, and free-range pork to make delicious bone broths and stocks. In addition, Carol’s vegetable stock and mushroom broth are instantly recognisable for their fresh, elegant, clean flavours.

Humans have been making stocks and broths for thousands of years and Carol uses traditional methods which have been handed down through the generations using natural, locally sourced ingredients which she simmers for hours to create the base for soups, gravies, stews, sauces and so much more.

Milgro

Don’t onions just give an irreplaceable flavour to so many dishes? Bet you just couldn’t cook without them? Happily, we have a steady supply thanks to the Miller family, which has been growing and packing onions since 1989. The fertile soil on their farm in the Roe Valley at the foothills of Binevenagh Mountain on the outskirts of Limavady is perfect for growing them.

The Millers are Northern Ireland’s only commercial grower of onions and provide a constant year-round supply of onions to the major supermarkets in the region. These brown onions, red onions, garlic and shallots are packed in their purpose-built pack house under supermarket brands.

They’ve just been signed up by Tesco too. Through their Milgro brand they have developed their crispy onion range, Crispy Tobacco Onions and Crispy Chilli Onions. We can vouch for their crunch which they get using special cooking methods and a secret recipe. They’re incredibly moreish and can be eaten hot or cold.

Lough Neagh Fisherman’s Co-Operative Society

Lough Neagh is home to the largest wild eel fishery in Europe and is also home to several species of wild freshwater fish including pollan, dollaghan (Lough Neagh trout) and perch. Traditional, sustainable fishing methods are used on the lough, which have passed down through the generations. It’s about preserving a way of life, protecting the fish and safeguarding a viable commercial fishery.

Lough Neagh Eels are rightly famous. They were awarded EU Protected Name status in 2011, the first product from Northern Ireland to receive the accreditation. These tenacious creatures make their way from the Sargasso Sea in the Atlantic Ocean, carried over 6,000km on the Gulf Stream to the mouth of the Lower Bann, and then into Lough Neagh where they stay for 12 to 20 years before returning home to the Sargasso Sea to spawn. Lough Neagh Pollan has also been awarded EU Protected Name status in 2018, setting the lough apart as home to not one, but two high quality wild-caught fish bearing these prestigious EU accreditations.

Morelli Ice Cream

Morelli’s manufactures more than fifty flavours of ice cream, sorbet and frozen yoghurt at their production plant in Coleraine, Co. Derry. This Italian family distributes their products all over Ireland and still operate their own ice cream parlours on the beautiful North Coast.

Morelli’s ice cream is made using the unique combination of an Italian recipe and Irish dairy ingredients from the famous Ballyrashane Creamery. The best- selling flavours are Double Cream Vanilla and Honeycomb. More unusual flavours include Irish Black Butter, Caramelised Hazelnut, Rhubarb & Custard and Chocolate Caramel Gold. Morellis also makes limited edition seasonal flavours as well as a new range called Two Tone Twist which is two flavours combined in the same tub.

Still very much a family affair, it’s the fourth generation of the family now at the helm. The latest products in the range are a new Vegan and Dairy Free Ice Cream called ‘Libero’ and a new environmentally friendly edible ice cream tub called ‘Ecotub’.
